English: Kruidkoek', Peperkoek or Ontbijtkoek are different Dutch and Flemish names for their local variations of gingerbread/pain d'épices. It is a heavy and sweet, fairly moist and spiced, bread-like cake that is often eaten with butter, either for breakfast or as a snack with hot coffee or tea. The dough is made with rye flour, and honey or molasses. The spices used can include cinnamon, cardamom, cloves, pepper, nutmeg, aniseed, coriander, and ginger.
